NEY CHORU (GHEE RICE)

Hi frnz,

Here is the simple Rice dish from my kitchen.(Recipe by my ikka)

Ingredients:

Basmati Rice – 3 cups

Ghee – 2 tbsp

Onions – 1 sliced

Ginger Garlic paste – 1 tsp

Cardamom – 4

Cloves – 4

Cinnamon – 1 small pc 

Water – 6 cups

Salt – to taste

Method

Wash and soak the rice in water for 20 minutes and drain it. Heat ghee in a pan and add sliced onions and all the spices.  When it is warm and onion fried till golden brown, Now add rice and fry for 3-5 mts in medium heat,stirring continuously.Pour water ,increase the heat to high and add salt into it.When the water starts to boil,simmer it and cover the pan with a tight lid and cook until the rice is boiled and all the water is absorbed.If you feel the rice is not cooked enough ,add 1/4 cup of hot water and again simmer for 4-5 mts.

Note: Here I did not add Cashew nuts and raisins. You can Garnish with fried onions,cashew nuts and raisins for good flavor.

Serve hot with Chicken curry or mutton curry.

Chicken Semi Gravy

Ingredients
  1. Chicken Drumsticks – 5 medium sized
  2. Lemon Juice – 1 tbsp
  3. Chopped Onions – 2 medium
  4. Green Chillies (Slit) – 4
  5. Curry Leaves – A sprig
  6. Ginger Garlic Paste – 1 tbsp
  7. Red Chillie Powder – 1 tbsp
  8. Turmeric powder – 1/2 tsp 
  9. Coriander Powder – 2 tbsp
  10. Fenu Greek Powder – 1 tbsp
  11. Garam Masala Powder – 1/2 tsp
  12. Coconut Oil – as required
  13. Salt – to taste
  14. Water – 2 cup
Preparation Method

  1. Heat coconut  oil in a pressure cooker sauté onions and curry leaves till brownish.
  2. Add the spices and salt to taste into the cooker and mix with fried onions.
  3. Reduce heat and add ginger garlic paste.
  4. Saute for a few minutes on low heat until the spices masala turns a nice brown color.
  5. Add water along with chicken drumstick into the cooker and mix everything nicely so that the masala is coated on the chicken pieces.
  6. Close the cooker and cook on medium low heat for around 4-5 whistle.
  7. Wait for some time till the pressure come down.
  8. Remove the lid and now this time to serve hot….Thumbs up

Vendakka Varuval (Ladies Finger Fry)

Ingredients :
Lady’s finger – 1/2 kg
Chopped Onion – 1 Pc
Coconut oil- 2 -3 tbsp
Turmeric powder – 1/2 tsp
Green Chilly – 2 pcs (Cut into two pcs)
Salt to taste
Mustard seeds – 1/2 tsp
Curry Leaves – as required

Method :
1. Wash and cut lady’s finger into 1/4″ circles.
2. Heat oil in a Pan, add mustard seeds and Curry Leaves. Then add chopped onions and fry, Once fried the onions  add lady’s finger pieces, turmeric powder, Green chillies and salt to taste. Mix all together and stir fry on a low heat, Do not cover the vegetable with a lid and cook on medium flame for 8-10mins.

Serve Hot…!!1

Tuna Fish Fry (Choora Meen Varuthath)

I like all kind of fish. One of my favorite fish is Tuna. Here I cooked Tuna Fish Fry. It’s very easy to make and the recipe as below.


Fish Fry

Ingredients:
Fish – 6 pcs (I used Tuna fish)
Red Chilli Powder – 1 tsp
Turmeric Powder – 1/2 tsp
Pepper Powder – 1/2 tsp
Ginger-Garlic Paste – 1 tsp (if required)
Lemon Juice – 1 tsp
Oil – For pan fry
Salt – to taste

Method:
1. Clean the fish and wash 2-3 times. Then Mix it with half tsp turmeric powder and half tsp salt, let it keep for 10-15 minutes and then wash the fish again two times in running water to remove the fish smell.
2. In a bowl or plate mix all spices, with lemon juice, ginger-garlic paste, salt; and Sprinkle little water to make into a fine paste. 
3. Marinate the pieces with the ground paste. Keep the marinated fish for half an hour.
4. Heat oil in a pan and shallow fry the fish pieces until both side turns dark brown and make sure that fish is roasted.

Garnish with thin slices of onion and lemon juice (optional) and serve hot with rice.

Chicken Curry

Ingredients:
Chicken - 1 kg
(cut into medium sized pieces)
Onion - 3 nos
Tomato - 2 nos
Ginger paste - 1 tsp
Garlic paste - 1 tspGreen Chilly - 4 nos
Chilly powder - 1 tsp
Coriander powder - 3 tspFenu Greek Powder - 2  tsp
Turmeric powder - 1/2 tsp
Garam masala powder - 1/2 tsp
Curry leaves - 1 stalk
Cloves(Grambu) - 3 nosCardomon - 4 nos
Salt - As required
Oil for frying- as required

Preparation Method of Chicken Curry
Heat oil in a pan.
Add onion and saute for a few mins.
When the color changes, add ginger and garlic paste and saute, till the raw smell goes away.
Add tomato's
Add the chicken pieces along with coriander, chilly, turmeric, Fenugreek and garam masala powders.  Mix well and stir for few mins.
Add water as required and salt to taste. Then close the pressure cooker.
When chicken is fully cooked allow it to simmer for a few mins.
Chicken curry is ready:) 
:Serve hot

Cardamom Tea (Elakka Chaya)

I love tea. I can’t even imagine a day start with without having a Tea. Since I have been using cardamom for my tea It’s giving a refresh and makes my mind fresh and relaxed.. and makes my day start with full of energy.
Also note that Cardamom Tea may help treat indigestion, prevent stomach pain, and relieve flatulence.

Cardamom Tea
What You Need:
2 cups of milk
1 1/2 cups of water
3 cardamom pods
4 tsp sugar
4 black tea bags
What to Do
Pour the water in a pot and bring to a boil uncovered.
While the water is boiling add crushed cardamom into water. 
When the water reaches a boil, add the sugar and the teabags and let it simmer until the water is rich and dark in color (about 5 minutes). Add the milk and let the concoction come back up to a boil. Again, let it simmer about 5 minutes. Don't boil too much as the tea will impart a bitter flavor
Strain into cups while piping hot.
Serve hot. Makes about 3 cups of tea and is best shared with your friends/family/roommates.
Note:The amount of milk and water can vary according to personal preference. If you want it more milky, increase the quantity of milk and lessen the water and if you want it less milky reduce milk and increase the quantity of water.

Icy Banana Milk Shake (Palum Pazhavum)



Ingredients:

1 Glass Milk (12 oz)

2 Banana (Palayanthodan Pazham)

2 Pieces Cardamon

50 gm Jaggery

Ice cubes

Directions 

In a blender, combine the bananas, ice cubes, milk, Cardamon and Jaggery. Cover, and blend for 2 minutes, or until ice is finely crushed. 

mmm Yummy Banana Milk Shake is Ready.
